Monroe County Homemakers’ money stretching recipes
The Monroe County Homemakers of Extension have their booth, bake sale and craft sale booth in the Far West Building at the Monroe County Fair.
There is a selection of cookbooks for sale and one of them is called Money Stretching Recipes. You can buy it for only $2, so I got one.
The recipes include Seven Layer Salad, Kidney Bean Salad, Breakfast Casserole (I made this recipe once for a church brunch), Sausage Rounds and … Free Soup.
What’s Free Soup? Oh, every frugalista has heard of this one, even if she doesn’t do it. Here’s the explanation from Betty Curley who contributed that idea:
Keep a large container in freezer. After each meal, put any small amounts of leftovers in container … meat cut into small pieces, vegetables, gravy. … When container becomes full, put everything in a soup pot.

I have done this, have a batch going now. I add on large jar/can of V-8 juice. Works wonders!
