Over on Serious Eats, there was a question recently of the one thing you would never eat. I responded with one particular dish.
Yesterday, CBSNews.com reported that the town of Elderon, Wisconsin, has a festival devoted to that particular dish.

Wisconsin is a very interesting place. Whenever my in-laws have a big party, they pull out the raw beef. Honest-to-god. They take fresh meat that they butchered themselves. They grind it up and season it. People just take handfuls of the stuff and eat it raw. Crazy!

Back in my Scary Foods post I talk about how I went through my whole range of emotions when Chef Tad once planted raw ground beef in front of me. Since your in-laws raise that beef themselves, I’m not surprised they feel it’s good enough to eat raw. Of course, I wouldn’t have said that before the Chef did to me what he did!
