This is *so* not an “kid friendly” recipe!
Really, this microwave peanut brittle recipe very simple.
Using a large microwaveable glass container (I have a huge 8 cup measuring bowl that I use, the handle helps a lot), mix together with metal spoon…
- 1 cup lightly chopped salted peanuts (party peanuts/cocktail peanuts, just not dry roasted)
- 1 cup sugar
- 1/2 cup light corn syrup
- 1/8 teaspoon salt
And microwave on high for 4 minutes. Stir quickly with a long metal spoon and microwave for 4 more minutes. Note: during this microwaving time, use non-stick spray (like Pam) on a large cookie sheet (one with side edges) and a heat-proof spatula. I also use a plastic disposable plate or the peanut can lid to sit my sugar-coated stirring spoon or you’ll have a hard-to-remove spot on your counter.
Stir in
- 1 tablespoon soft butter
- 1 teaspoon vanilla (imitation vanilla will not work)
And microwave for one more minute. Note: there will be A LOT of heat released when you stir in the vanilla, be prepared!
Mix in quickly and thoroughly
- 1 teaspoon baking soda
Note: this will make the mixture bubble up, be prepared for that! Pour onto the cookie sheet. Spread evenly and let cool on the counter. Use the sprayed spatula to scrape the glass bowl clean. To spread it, I shake the pan and lean the pan back and forth to make it spread evenly. You could spread it with the spatula or spoon too. Be careful the metal pan will heat up quickly.
Break apart and store in an airtight container. IDK how long this lasts because there is never any left after day one.
It will look like the bowl is impossible to clean, but let it soak in hot water and it pretty much cleans itself.
This is a good food item to bring to a get together or to box up and give as a gift.
Disclaimer: microwave speed and strengths vary, so adjust recipe accordingly. I do not use a candy thermometer, but if you are concerned if your brittle has not reached hard ball stage, you could drop a spot in a jar of water and make sure it hardens fully. After your first batch, if you need to add time (like if the candy didn’t set up) or take away time (like if it looks too brown or tastes overdone), do it before the step where you add the vanilla.
